They're calling it a microbrewery for coffee, as local chain Bridgehead prepares to open its new $3 million roastery in Ottawa.

The building on Anderson Street in Little Italy aims to show coffee-lovers how the brewing process works, from bean to bold roast.

"Just like when you're cooking steak on a skillet, you're basically cooking it in a very controlled way to develop those amino acids and proteins and sugars into beautiful flavours," said Tracey Clark, Bridgehead's managing director.

Bridgehead officials are promising a unique fresh coffee experience.

"You get coffee in the end that smells beautiful," said director of coffee Ian Clark. "It's sweet, it's juicy, it has nice texture."

The roastery has a 60 kilogram main roaster and a 33 kilogram smaller roaster for experimenting.

It opens to the public next week.
