Perfect Pasta Dough

- 2 1/2 cup of all purpose flour
- 2 whole eggs
- 3 egg yolks
- 1/2 teaspoon of salt
- 1/ teaspoon olive oil
- Semolina flour for dusting
In a bowl, mix the sifted flour and salt together and make a well.
Add the slightly whisked eggs and yolks and olive oil in the center and mix for 3-4 minutes.
Dust with semolina flour and let rest for 1/2 hour covered with a kitchen towel.
Dust a table surface with a little semolina flour and roll the dough flat until thin enough to go thru a pasta machine and mold into desired shape.
If making a stuffed pasta, to have dough sticky together, simply brush with a eggs wash mixture of equal part yolk and water.
