Roasted Cauliflower & Chickpea Salad

Ingredients:

  • 3 cups arugula or spinach chopped lightly
  • 1 can chickpeas, drained and rinsed
  • 1 head cauliflower, chopped and roasted
  • 6 blue plums or figs, quartered
  • 1/4 cup pickled red onions
  • 1/4 cup crumbled goat cheese, optional
  • 3 tbsp good quality olive oil
  • 1 tbsp white balsamic vinegar
  • Salt & pepper to taste

Cooking Instructions:

In large bowl, toss together all ingredients, adjust seasoning and enjoy! Refrigerate any leftovers for a delicious snack. Serve alongside grilled fish or chicken.
