Domaines Ott Rosé 2014

Côtes De Provence A.C., France

Produced by Château De Selle Coeur De Grain, this is spectacularly great, and probably the best-known rose in the region famous for it. Dried herbs, savoury goodness, bone dry, complex. This is the Dom Perignon of rose from Provence. Domaines Ott is a Cru Classe that leads the pack worldwide for rose, thus that price tag. Complex, wild yet elegant. Love that curvy bottle too. Pair with halibut.
