Quinoa and Veggie Salad from the Ottawa Regional Cancer Foundation

Serves: 6


1 ½ cups quinoa, uncooked
1 cup canned chick peas, rinsed well
½ cup cucumber, diced
½ cup yellow bell pepper, diced
½ cup carrots, grated
⅓ cup green onions, chopped


3 tbsp extra virgin olive oil
2 tbsp lemon juice, freshly squeezed
1 garlic clove, pressed
½ tsp freshly ground black pepper


1.Cook quinoa as directed on package. When quinoa is cool, transfer to large mixing bowl and stir in all remaining ingredients.
2.Whisk dressing ingredients together. Pour over quinoa salad and mix well. Refrigerate for an hour before serving.
