Cornmeal muffins

  • 1 cup flour
  • 1 cup cornmeal
  • 1 tsp salt
  • 4 tsp baking powder

Sift together

Blend 2 tbsp ground flax seeds with 6 tbsp water.

Add flax mix and 1 cup soy milk to dry mix. Do not overmix!

Bake 20 mins at 375.

 

Cake pops

  • 3 cups crumbled cake
  • 1/4 cup - 3/4 cup icing
  • 3 cups dark chocolate chips
  • 2 tbsp coconut oil
  • sprinkles for decoration
  • 6 inch long lollipop or cookie sticks
  • Styrofoam stand (pick up floral styrofoam from Michaels or a dollar bin, or a styrofoam cake dummy from Bulk Barn)

Add icing to your 3 cups of crumbled cake a 1/4 cup at a time. You may need more or less, so it is best to add just a little bit at a time so the mix does not get too soft. Your texture should be tacky enough to roll some cake into a ball and have it keep its shape. If there is not enough icing, it will fall apart; if there is too much, it will lose its shape and sag. Roll your cake pops into golf ball sized balls, and place on parchment paper.

Melt your chocolate and coconut oil together, either using a chocolate melter, or by placing them in a metal bowl that sits on top of a pot of hot water. (It is ok for the water to be on a low boil, but you do not want it too hot or the chocolate may burn). Keep stirring your chocolate until it is fully melted and the coconut oil is fully mixed in.

Dip your lollipop stick into the melted chocolate about 2 cm deep, and insert 1/2 way into the cake balls standing straight up. Once all cake balls have had the lollipop sticks inserted, refrigerate for 45 minutes - 1 hr.

Prepare your decoration station while the cake pops are chilling. When they are ready, take out 3 at a time to decorate. You may find you need to round the top of the cake pop out a bit if it is too flat. Dip your first cake pop into the melted chocolate, and let any excess chocolate drip off before placing it in the styrofoam holder. Dip your other 2 cake pops in, then go back and sprinkle your decorations on top. It is best to add decorations when the chocolate has set just a little bit so that they still stay on top, but do not slide down the cake pop.

Allow to fully set in room temperature, and voila! A tasty & festive treat for all to enjoy.
