Heat Crusted Salmon
Infuse flavour using enerjive crackers. Gluten free and loaded with goodness this is the easiest meal and ready in under 20 minutes.
Prep time: 5 minutes
Bake Time: 10-15 minutes
- 2 salmon filets (about 6 oz)
- 4 Garlic Cayenne Quinoa Crackers, broken
- 1/2 cup walnuts
- 1/4 cup fresh cilantro leaves
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
Preheat oven to 450F. Place salmon, skin side down on foil or parchment lined baking sheet.
In food processor, pulse crackers into bread crumb consistency: add walnuts, cilantro, lemon juice and zest. Pulse until walnuts are ground and mixture is able to stick together, add additional water if necessary.
Press half the mixture on each salmon filet. Bake in oven for 10-15 minutes depending on the thickness of the salmon. When fish flakes with a fork and is opaque it is finished.
Serve with green salad!
