Broccoli Pest Sauce

Serves 3.

  • 3 cups Ontario chopped broccoli florets and stems
  • 2 cloves Ontario garlic
  • 1/3 cup slivered almonds or pine nuts
  • 3 tablespoons olive oil
  • ¼ cup fresh Ontario basil or 1 tablespoon dried basil
  • 1/3 cup grated Parmesan cheese

1. In medium saucepan, cook broccoli in boiling water 4 to 5 minutes or until crisp-tender; drain and cool.

2. In food processor or blender, combine broccoli, garlic, almonds, oil and basil; process until coarsely chopped.. Add cheese; process until well mixed.

3. To serve, toss Broccoli Pesto with hot cooked pasta and sprinkle with shaved Parmesan cheese if desired. Alternate serving tip: For a quick vegetable side dish, spread a layer of pesto on cut surface of tomato halves. Broil just until pesto bubbles.

Warm Cabbage and Turkey Salad

Serves 5.

  • 3 tablespoons apple cider vinegar
  • 3 tablespoons apple juice or apple cider
  • 4 teaspoons Ontario liquid honey
  • 1 tablespoon light soy sauce
  • 4 teaspoons vegetable oil
  • 1 teaspoon sesame oil
  • 5 cups finely shredded Ontario cabbage
  • 1 small unpeeled Ontario Apple, julienned
  • Salt and pepper
  • Thin strips cooked turkey

1. In large non-stick skillet, combine vinegar, apple juice, honey, soy sauce, vegetable oil and sesame oil; heat to steaming over medium heat.

2. Add cabbage; toss until colour brightens and cabbage is wilted but still crisp. Add apple. Season to taste with salt and pepper.

3. Add turkey; toss for 1 minute to warm turkey. Serve warm.

Apple, Walnut and White chocolate cookies

Makes about 40.

  • ½ cup softened butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1 ¾ cups all purpose flour
  • ½ teaspoon each: baking soda and nutmeg
  • Pinch salt
  • 1 Ontario apple, cored, finely chopped
  • ½ cup chopped toasted walnuts
  • 4 ounces (113 g) coarsely chopped white chocolate or white chocolate chips

1. In large bowl, cream butter, brown sugar and egg until blended.

2. In small bowl whisk together flour, baking soda, nutmeg and salt; add to creamed mixture, mixing well. Stir in chopped apple, walnuts and chocolate; mix well.

3. Drop by small spoonfuls, about 2 inches apart, onto greased or parchment-lined cookie sheets. Bake in preheated 375 degrees F oven for about 15 minutes or until golden brown. Let cool on racks.

Apple Butter

Makes 2 cups.

  • 4 cups peeled, chopped apples
  • 2 cups apple cider or juice
  • 3/4 cup sugar
  • ½ teaspoon each: allspice and cinnamon

1. Place apples and cider in a large saucepan. Bring to boil. Reduce heat, cover and simmer 10 to 15 minutes, or until apples are very soft. Stir occasionally during cooking.

2. Press apple mixture (liquid included) through a sieve back into the pan. Stir in remaining ingredients. Boil gently, uncovered, stirring every 5 minutes, for 1/4 to 1/2 hour, until mixture reaches desired thickness. It should be quite thick.

3. Store in refrigerator or freezer.
