What to do with all of those zucchini?? Spiralize and use in place of pasta or make a road house favourite but healthy enough to eat as an everyday side dish.

  • 1 cup (250 mL) breadcrumbs (grind enerjive crackers for delicious gluten and dairy free option)
  • 2 eggs, lightly beaten
  • 2 medium zucchini cut into 3-inch X1/2-inch long sticks
  • Sea Salt and pepper, to taste

Place breadcrumbs in shallow dish.

Meanwhile dip sticks in egg then dredge with crumbs until well coated. Repeat and place on parchment lined tray. Bake in 450F oven for 12 minutes; then and bake another 8 minutes or until crispy on the outside and tender on the inside.

Dip:

  • 1/4 cup (50 mL) Neal Brothers Classic Mayonnaise
  • 2 tbsp (30 mL) grated horseradish
  • Sea Salt and pepper, to taste

Combine Neal Brothers Classic Mayonnaise with horseradish, salt and pepper. Serve immediately or refrigerate until serving time.
