Lotus Fine Foods Oatmeal Chocolate Chip Cookies:

Ingredients:

- 1/4 cup butter
- 2 eggs
- 1/2 cup agave syrup
- 1 tsp vanilla
- 1 cup gluten free flour mix
- 2/3 cup gluten free oats
- 80g Dark Chocolate Quinoa Granola
- 1 tsp baking powder
- 1/4 tsp salt
- 3 tbsp mini chocolate chips

Instructions:

Preheat oven to 350 degrees. In a large bowl cream butter until soft. Add eggs and vanilla and beat until light and fluffy. Add the agave and mix well. Set aside. In a medium bowl combine the flour, oats, granola, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until batter is consistent and smooth. Fold in the chocolate chips. Scoop 1 tablespoon spoonfuls of dough onto a parchment paper lined baking sheet. Bake for 10-12 minutes, until the cookies are golden brown. Allow to cool for 15 minutes before serving. Eat them as is or make them into ice cream sandwiches! Makes 20-25 cookies.
