Easy Homemade Catelli® Fusilli with Oven Baked Chicken

Ingredients:

1 pkg (375g)     Catelli Smart® fusilli
2 tbsp (30 ml)    olive oil
4 (5oz each)     chicken breasts
4 cloves     garlic, minced
1/2 cup (75 g)    onions, diced
1cup (175 g)    cherry tomatoes
1cup (30 g)    baby spinach
4 tbsp    (60 g)    sundried tomatoes, julienned
4 tbsp    (60 g)    basil leaves, julienned
1 cup (100 g)     shredded aged cheddar
salt and pepper to taste

Instructions:

Step1: Preheat oven to 350°F.

Step 2: Marinate chicken with salt, pepper and 1 tbsp of olive oil. Bake in the oven for 15 minutes or until chicken is cooked through.

Step 3: Cook Catelli Smart® fusilli according to the package directions.

Step 4: While your pasta is cooking, sauté olive oil, onion and garlic in a large non-stick heavy bottom fry pan over med-high heat for 2 minutes.

Step 5: Reduce heat to medium. Add tomatoes and sauté for an additional 2 minutes.

Step 6: Strain hot water off pasta in a colander. Do not rinse. Add pasta to the mixture in the fry pan.

Step 7: Stir in basil, spinach and sundried tomatoes. Add salt and pepper to taste.

Step 8: Serve in a pasta bowl. Slice chicken into wedges and place on top of the pasta. Add shredded cheese and serve.
